I would like to provide clients with the option to pay the amount that they think is fair. Kind of like a patreon model. Is that something I can do through the Infusionsoft payment system?

The most common solution is to offer a $1 option and let the customer choose to purchase as many of those as they like.

You can set up a process where you have an order for one that has only one dollar listed and they can change the total number of items they have in their cart, so if they want to pay you $85 they could change the number of one dollar units to 85 and that would give you an $85 payment.
